Ingredients
  • 1 lb ground turkey, grass-fed beef or ground chicken
  • 1 onion, chopped
  • 1 16oz can kidney beans, drained
  • 1 16oz can black beans, drained
  • 1 16oz can whole kernel corn (no salt added), with liquid
  • 1 15oz can rotel-style tomatoes
  • 1 14oz can diced tomatoes, no salt added
  • 1 Tbsp dried parsley
  • 1 tsp dried dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp oregano
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups water

Instructions
  1. Brown meat & onions, drain if there is excess liquid (I left mine in.)
  2. Mix seasonings into meat.
  3. Add the rest of the ingredients into mixture.
  4. Cook on low for 4-6 hours.
Recipe Notes

Use your imagination to garnish this.  Some ideas:  avocado, scallions, shredded cheese, hot sauce, jalapeños, sour cream.  Enjoy on it’s own or over rice (cauliflower or regular), or some roasted vegetables.
