This was a BIG hit in my house. The kids LOVED it (and so did hubbie.) The best part? It could not have been easier to make. Took me about 15 minutes to throw together and then just set it and forget it!

Ingredients
- 1 lb ground turkey, grass-fed beef or ground chicken
- 1 onion, chopped
- 1 16oz can kidney beans, drained
- 1 16oz can black beans, drained
- 1 16oz can whole kernel corn (no salt added), with liquid
- 1 15oz can rotel-style tomatoes
- 1 14oz can diced tomatoes, no salt added
- 1 Tbsp dried parsley
- 1 tsp dried dill
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 Tbsp chili powder
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp oregano
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups water

Instructions
- Brown meat & onions, drain if there is excess liquid (I left mine in.)
- Mix seasonings into meat.
- Add the rest of the ingredients into mixture.
- Cook on low for 4-6 hours.
Recipe Notes
Use your imagination to garnish this. Some ideas: avocado, scallions, shredded cheese, hot sauce, jalapeños, sour cream. Enjoy on it's own or over rice (cauliflower or regular), or some roasted vegetables.
